Chipotle Mac and Cheese

8 oz elbow macaroni
1 Tbsp olive oil
½ cup chopped onion
1-2 diced chipotles in adobo sauce (plus some of the sauce)
2 cloves minced garlic
15-16 oz can diced tomatoes, undrained
1 cup cottage cheese
4 oz shredded cheddar cheese
Up to 2 oz any other cheese you like
Salt & pepper to taste
1 cup breadcrumbs

Cook macaroni until just done and put in oven-safe dish.


Over medium heat, heat oil until hot, then cook onion until it’s soft. Add chipotles and garlic. Cook for a few minutes. Add diced tomatoes and cook for a few more minutes until most of the liquid has cooked off.

Add cheeses and tomato mixture to the macaroni, season with salt and pepper, and stir really, really well. Top with breadcrumbs and bake at 350 degrees for 30-40 minutes, until top is browned and cheese is bubbling.

Yum, sound deelish! Too spicy for the kids then, huh?

Yeah - even with only one chipotle it would probably be too spicy.
